Chou Izakaya takes its name from Izakaya, the traditional bars frequented by members of Japan’s workforce who enjoy shared snacks and drinks after work. In the kitchen of a subdued, stylish lounge with canary-yellow walls and finely finished wooden picnic-style tables, chefs carry on the tradition by preparing between 40 and 50 small plates each day. Among their specialties are tempura-fried avocado with citrus sauce, smelts grilled over embers of Japanese white-oak charcoal, and fresh sushi that they slice and roll themselves rather than searching for already-assembled rolls in the ocean. Bartenders complement the food by pouring sake and mixing cocktails with ingredients such as aloe and yuzu juice.
