It’s worth visiting CIBO Wine Bar on Yonge Street just to see the wine storage system. The 2,500 bottles reside in a two-story wine room, where a harnessed employee—dubbed a “wine angel”—soars up and down the shelves, retrieving requested bottles. It’s a striking sight, but also a practical one, like most design elements at the industrial chic space. Consider also the open kitchen, where a 40-foot counter invites diners to make sure the chefs are really cooking and not just making pasta jewelry. Exposed-brick walls and butcher-block tabletops also serve to create the right ambiance.
But the sleek decor is just one facet of the 10,000-square-foot wine bar. It’s also an authentic Italian restaurant. Executive Chef Saverio Marci grew up in Italy, and his childhood home is reflected in classic dishes including house-made pastas, thin-crust pizzas, and flavorful risottos. Fresh seafood is also prominent, as chefs stuff ravioli with lobster, grill trout in a lemon caper sauce, and toss linguine with clams, mussels, calamari, and tiger shrimp. On Sundays, Chef Marci adds the same Italian flair to brunch, cracking made-to-order eggs, curing meats in-house, and squeeze fresh orange juice.
