At Nice Pan’s location inside Perola Supermarket in Kensington Market, staffers whip up rolled ice cream, a treat that’s still fairly uncommon outside of the streets of Thailand. They pour a liquid vanilla or chocolate base into a freezing cold pan and add mix-ins such as banana, berries, or Nutella. They continuously smooth the mixture across the pan until it becomes hard, then scrape it into rolls before adding finishing touches of toppings like whipped cream and caramel sauce. Flavours include a savory vanilla ice cream dotted with bacon bits and walnuts, as well as a deconstructed version surrounded by cone flakes.
