Plush red carpeting, colorful stained-glass lamps, and artwork inspired by the subcontinent lend a calming and elegant air to Bombay Palace’s dining room. Inside the kitchen, however, things are a bit more vibrant as Executive Chef Sanjiv Malhotra and his skilled crew work hard to create and plate Indian culinary traditions. Chef Malhotra takes pride in his signature dish of king prawns bathed in a saffron sauce, but he also nimbly whips up regional specialties such as saag paneer from the eastern side of the country and spicy vindaloos from Goa. In an effort to satisfy any diet, his menu also includes a handful of vegan dishes built from potatoes, cauliflower, or eggplants, and he takes care to indicate which entrees are gluten-free or contain nuts.
