Visitors enter The Wine Bar to sip from more than 200 hand selected wines and explore an ever-changing menu of tapas crafted by executive chef Bryan Burke with local and naturally grown ingredients. Gazes turn to the open kitchen, in which culinary artisans whip up signature small plates intended for sharing and mid-meal juggling such as Yukon gold fries ($5) that beckon dipping into the eatery’s homemade ketchup. Ontario cheese curds cap a small plate of braised beef cheek poutine ($9), and five-year-old cheddar entices dining crews to split an artisan cheese platter ($16). For dessert, the kitchen enlightens taste buds to the simultaneously soft and crunchy crème brulee’s caramelized shell and candied walnuts ($7). For wine pairings, patrons consult a list of potables packed with more international flavours than the United Nation’s weekly bake swaps, including a white 2009 Borgo Boschetto Pinot Grigio from Italy ($6.25/3 ounces).

Chandeliers paint light across the dining area, illuminating exposed brick walls as well as a towering wine rack. In the kitchen, technicolour displays of jars adorn shelves and hold the organic, seasonal, and sustainable ingredients that infuse all of The Wine Bar’s cuisine and it’s end-of-night confetti.
