Inspired by the flavours of the spice route, Segar looks at the world as a global pantry from which to concoct new delicacies. Chef Segar Kulasegarampillai—whose cooking experience traverses Sri Lanka, India, Canada, the United States, and countless potlucks—plies French culinary techniques as he packs multiple continents into every nibble, as in appetizers such as the slow-roasted sweet red-pepper-and-eggplant soup with Quebec goat cheese ($7), or the segar salad, boasting romaine hearts, hard-boiled egg, Kalamata olives, anchovy, and parmigiano ($9). Mains continue leapfrogging the globe as braised brisket short ribs lounge atop plantain puree while deliberating a dip in the Madagascar-green-peppercorn-and-bitter-chocolate reduction ($26). To sate hearty appetites, the star anise brined pork chop comes paired with coconut black rice and red curry demi glaze ($19). Segar also spins international flavours into its cocktails, including its own take on the Bloody Mary—the Bloody Segar—with fennel and chili-infused vodka ($8) and the sour gooseberry martini, which mixes up Indian green gooseberries who, despite their sourness, know how to sweet-talk taste buds ($12).
